100g butter, cut into pieces, and butter for greasing 100g dark chocolate (at least 70% cocoa solids) broken into pieces 300g caster sugar 2 eggs, beaten 2 tsp vanilla extract 100g wholemeal flour finely grated zest of 1 orange 50g dried apricots 50g walnut pieces PREPARATION Preheat oven to 180 deg C. Lightly grease a 20 cm square shallow tin with butter. COOKING METHOD Melt butter and chocolate together in a bowl set over a saucepan of simmering water. Remove from heat and beat in the sugar, eggs and vanilla extract. Stir in the flour, orange zest, apricots and walnuts. Pour into tin and bake for about 40 minutes until a skewer inserted into the centre comes out clean and the surface is slightly cracked. Allow to cool before turning out of tin and cutting into slices.
